One of my Project 52 goals was to try a new recipe each week and blog about its success or disaster. I was given two awesome cookbooks for Christmas and am planning to cook my way through them. This recipe comes from the Better Homes New Cookbook, 15th Edition. LOVED it in a major way. Both Aaron and I were practically licking our plates clean after going back for seconds. Porkers.
Ingredients:
4 skinless, boneless chicken breast halves
5 Tbs cold butter
2/3 C dry white wine
1/2 C chicken broth
1/4 C finely chopped shallot/onion
2 Tbs whipping cream
1) Pound chicken to 1/4 in thickness. Sprinkle chicken w/ 1/4 tsp salt and 1/4 tsp pepper
2) In a very large skillet melt 1 Tbs butter over medium-high heat. Reduce heat to medium. Add chicken to skillet. Cook chicken for 6-8 minutes, turning once. Transfer chicken to platter; cover with foil. Remove skillet from heat.
3) Add wine, broth and onion to hot skillet. Return skillet to heat. Cook and stir to scrape up the browned bits from the bottom of the pan. Bring to boiling. Boil gently, uncovered, about 10 minutes or until liquid is reduced to 1/4 C. Reduce heat to medium-low.
4) Stir in cream. Add remaining 4 Tbs butter, 1 Tbs at a time, stirring until butter melts after each addition. Sauce should be slightly thickened. Season to taste with additional salt and pepper. Serve sauce over chicken.
I served this chicken with rice and a spinach salad.
