Wednesday night I whipped up a dish completely void of recipe books and totally winged it. My chicken dish was delicious if I may say so myself! My husband cleaned his plate and packed the leftovers for lunch the following day. I think it's safe to say this recipe is a crowd pleaser.
Ingredients:
4 boneless skinless chicken breast halves
2 eggs
6-8 limes
1 1/2 C bread crumbs
2 Tbs (or to taste) Chili powder
1 Tbs (or to taste) Garlic powder
Preheat oven to 375*. Spray 13x9 baking dish with cooking spray. In a small bowl, mix the eggs and the juice of 2-3 limes. In a separate dish mix the bread crumbs, chili powder and garlic powder. Dip the chicken first in the egg mixture and then the bread crumb mixture before putting in the baking dish. Squeeze 3-4 limes over the covered chicken breasts in the baking dish. Quarter a lime and place it around the chicken. Bake chicken, uncovered, for 30 minutes.
I served this dish with Spanish rice and guacamole. Enjoy!
